Trout speck with “Fen” and pumpkin with apricot vinegar

Ingredients for 6 people:
    • 1 trout speck from the Armanini brothers*
    • 1 jar of "Fen" from Noris*
    • 300 gr of pumpkin, cut into 1-inch cubes
    • Extra virgin olive oil
    • Salt
    • Pepper
    • Apricot vinegar from Karl Luggin*

This month’s originàrio box contains trout speck, a traditional product made with an innovative touch that renders it absolutely unique. For a product as flavourful and special as this, recipes are superfluous.

Cut the trout speck in the same way as you can see in the photos on the originàrio website.

Eat the trout speck cool – neither directly from the refrigerator, nor at room tempertaure.

Accompany the trout speck with a spoonful of Fen, which emphasizes the mountain herbs on the speck’s rind.

On the side, prepare a pumpkin agrodolce sauce: Sautè the pumpkin cubes with olive oil, garlic, salt, and pepper, cover in a saucepan, and cook. Just before it’s ready, reduce the liquid and add 3 tablespoons of Luggin’s apricot vinegar.
