Sconcigli (purple dye murex)
Sconcigli, or purple dye murex, are from the same family as gastropod mollusks—more commonly known as snails and slugs—and it is this family that gives them their purple color. These sea mollusks are crunchy and sweet with a light aftertaste of liver. The sconcigli conserves from Luigi Crescenzi and Angela Capobianco are pure, without any added aromas. As soon as you open them, you can smell the rocky coast of the Tyrrhenian Sea. They are excellent in salads with a spritz of lemon and drizzle of olive oil, or briefly heated in a fresh tomato sauce with a touch of garlic, parsley, and hot chili pepper, then served over your choice of pasta.
