Paccheri pasta made of Saragolla grain
Amber in colour and with an intense flavour, the Saragolla is a pure, ancient grain that makes these Paccheri by Sabatino so special. Rich in proteins, amino acids, vitamins and minerals – and low in gluten! – the Saragolla takes centre stage next to the conventional grains. The Saragolla grain, in full respect for its intrinsic characteristics, is transformed into Paccheri pasta in a natural and traditional way: the grains are ground by stone, the pasta is pressed with bronze plates, and the drying goes slowly, at low temperatures.
