Donkey Mortadella

Ingredients for 6 people:
    • 300 gr Donkey mortadella by Massimiliano Castro*
    • Orange blossom honey*
    • Salad (spinach, watercress, celery, olive oil, lime, salt, pepper, croutons, cinnamon, hazelnuts, and dried figs as needed)

This month in the originàrio box, you’ll find a nice slice of donkey mortadella. This is a very unique food, a traditional Italian product – mortadella – created with an innovative touch.

For products such as this one, a particularly tasty and lean meat, recipes might be superfluous. Cut the mortadella in large squares, as big as 2×2 cm, and enjoy it on its own. For a pleasant contrast, accompany with carob honey.

Eat it fresh and cool: wait a minute after removing it from the fridge, but don’t let it reach room temperature.

Accompany the mortadella with a spinach and watercress salad, with thinly sliced celery (you may also want to use the smallest, most tender leaves of the celery stalk), dressed with an emulsion of olive oil, lime, salt, and pepper. You can make the emulsion using a mini immersion blender, which will make it light and silky smooth. To enhance the flavour of the mixed vegetables, add a few drops of honey to the dressing.

You may also want to imitate a Caesar salad by adding croutons. Toast bread squares in a saucepan with olive oil, pepper, and a pinch of cinnamon. If you like salads with creative and somewhat unusual flavours, sprinkle it with hazelnuts and dried figs cut in pieces.
