The Cosaruciaru beans are incredibly sweet. The beans are a heritage variety and have been grown in the ecosystem of Scicli for a long time, which makes them quite resilient. These beans are suitable for many preparations, but in wintertime they are especially tasty in soups or for creams.
Soak the beans for about 8 hours —attention: they will triple in size! Cook the beans for 40 minutes. In order to obtain a creamy soup, cook them for at least 50min, adding salt halfway through the cooking in order to soften the skin.
