Cascinaronchi M.C. Quarticello 2012

At the foot of the Reggio Apennines, in Montecchio, one can find five hectares of organically cultivated vineyards. This particular wine is made according to the productive principles of the “Metodo Classico”. At first, The Spergola grapes undergo a short two- to three-day maceration, before they go into the primary, spontaneous fermentation. The must, which is added before bottling, is made from Malvasia di Candia grapes. At the end of the second fermentation, the bottles are uncorked, the lees are removed and the bottles are topped up with the same wine – no sugar is added. Dry, clean and fresh, this sparkling white is an ode to the flavours of grapefruit, with a slightly bitter finish.
