Italian olive mustard

Italian “mostarda” is a chutney made of candied fruit and mustard that is traditionally served with various meat dishes. Why not throw some olives in the mix and make a “mostarda di olive”?

This innovative mustard combines the intense bitter, and obviously oily flavour of the olives with the classic sweet and sour jam of a typical mustard mix, creating an intriguingly complex flavour composition. This mustard goes just as well with creamy and fresh cheeses, as it does with fatty salami, or stewed game such as capon, chicken or even pheasant. And if you want to be really Italian, try it with zampone (“stuffed pigs trotters”) or cotechino!
